Smoked Fish Pie

It’s not exactly Summer weather at the moment, so I thought that I could get away with cooking something a little more comforting this week. I’m just not in the mood for salad!

I have never tried smoked cod. I’m not sure how this has happened, as I love fish. Aldi sell bags of frozen smoked cod fillets, so I thought it was time to give it a go. Fish pie is always popular in our house, especially with me, as it lasts for 2 days! It can be quite time consuming, as there are quite a few elements to make.

This is a really quick fish pie. No need to pre-cook the fish and no standing by the hob stirring a sauce. You could make this with ordinary cod, but the smoked adds so much flavour. The crushed new potatoes gives it a bit more texture than mash – and you don’t have to worry about lumps!

  • Defrosted 500g bag of Aldi smoked cod fillets
  • 1 onion
  • 300ml tub of Aldi soured cream
  • 1 dessert spoon of finely chopped dill + extra to sprinkle on top.
  • Knob of butter
  • Drizzle of olive oil
  • 1kg charlotte potatoes
  • 50g cheddar cheese
  • Vegetable stock cube
  • 200g frozen sweetcorn
  • Salt and pepper to taste
  1. Cut the potatoes in half (thirds for larger ones) so that they are all roughly the same size. Cover in cold, salted water and bring to the boil. Simmer for 20 minutes until tender.
  2. In the meantime, heat the oven to 200C.
  3. CutĀ the onion into thin slicesĀ and place in a frying pan with a little olive oil. Fry for 10 minutes on a low heat, until soft and translucent. Place the onions into a heat proof dish, approximately 30cm length x 20cm width x 15cm deep.
  4. Add to the dish; soured cream, dill, a crumbled vegetable stock cube, frozen sweetcorn and season with salt and pepper.
  5. Cut the defrosted cod into bite sized chunks. Roughly 5-6 pieces per fillet.
  6. Add the cod to the ingredients in the dish and mix well.
  7. Drain the potatoes and roughly mash them. It should still have large lumps in it. Add a knob of butter and some seasoning and mix until the butter has melted.
  8. Spoon the potato onto the fish and spread evenly until completely covered.
  9. Sprinkle the cheese over the top and place in the oven for 45 minutes until browning and crispy.
  10. Sprinkle some chopped dill over the top and serve.

    This pie was awesome and so quick n easy to make. Added Aldi frozen mixed veg as well as sweetcorn. My daughter is 7 and it didn’t touch the sides!
